There is something about gravy which makes it not only delicious but also slightly comforting.
Perhaps this is because of the fond memories it brings up of traditional Sunday roasts with all of the family. Hopefully you have a gravy recipe which has been handed down through the generations. Some families prefer it quite thin – more of a jus, whereas others prefer it quite thick, although we like to think not thick enough to stand a spoon up in it. Indeed in the UK strictly speaking a gravy is un-thickened meat juices and traditional gravy recipes use the fat and juices from the meat combined with some of the cooking vegetable water and a little gravy browning if required (for example when cooking poultry). For thicker gravies the thickening agent being flour generally which is incorporated at the early stages into the fat of the meat before any liquid is added. Of course there is nothing wrong with good, convenient old Bisto or Oxo and if these are your gravy of choice spruce them up with a bouquet garni or some slowly cooked onions for proper onion gravy. p>
A useful tip for serving is to preheat the dish with boiled hot water before adding the gravy. This heats up the serving vessel nicely so you can have piping hot gravy at the table. Remember to empty it out though before adding the gravy!
