Amaranth Seeds can be used in cooking in a whole variety of ways: For baking - grind amaranth seeds to a flour using a grain mill or similar; 20-25% of the amount of flour given in recipes can then be replaced by Amaranth flour. For cooking - simmer 1 part of seed with 3 parts of water for a good 40-45 minutes. The boiled amaranth seeds are extremely suitable for making burgers and in vegetable stir fries. For popping - heat a dry frying pan (do not add fat) on the hob, sprinkle amaranth seeds onto it using a spoon and immediately cover with lid. The seeds will pop up in just a few seconds. A tasty addition to muesli, yoghurt and desserts.
For sprouting - soak the amaranth seeds for 12 hours, wash them thoroughly and then leave them to sprout in a sprouting jar like alfalfa.
